Crispy Fried Tomatoes
- 2 tomatoes
- 2 eggs
- 2 cups coconut flour (We used Nutiva Organic Coconut Flour - click for more information)
- coconut oil (We used Viva Labs #1 Organic Extra Virgin Coconut Oil - click for details)
- salt and pepper, to taste
Directions: Heat coconut oil in a skillet over medium heat. Slice the tomatoes (thickness is up to you). In a small bowl, beat the eggs. Dip the tomato slices in the egg mixture, then coat with coconut flour. Fry the tomatoes in coconut oil until they are golden brown. Season with salt and pepper, to taste.

Tips and Tricks:
