John Morrell is a Cincinnati based meat manufacturer, celebrating their 175th anniversary.
Our local Bigg’s carries a great assortment of John Morrell pork products, plus their own brand of luncheon meats; Kretschmar.
A simple use of one of their delicious pork roasts is Crock Pot Carnitas. Shredded seasoned pork, with black beans, peppers and sweet corn makes for a delicious and filling burrito.
Here’s the easy recipe!
Crock Pot Carnitas
3-4 pound pork roast (loin, picnic, etc)
4 oz can diced green chilies
1 T chili powder (yes, I said Tablespoon!)
2 t salt (I love Kosher salt)
1 t cumin
2 t minced garlic
1 green or red bell pepper, sliced
1 onion, chopped
1 can black beans, drained and rinsed
1 can corn, drained
Place roast in crock pot. Sprinkle roast with chili powder, cumin, garlic and salt. Cook on low for 8-10 hours. Remove meat to platter. Add corn, onion, bell pepper and black beans. Cook on low for 1 hour. Shred meat (when cooled) and add to veggies and juices.
Serve with tortillas. Use salsa, cheese, sour cream, rice for “Chipotle” type burritos.
