Jessica Simpson turned heads in a form-fitting strapless yellow dress at the John Varvatos Stuart House Benefit in Los Angeles Monday. Simpson has lost about 70 pounds since giving birth to son Ace (in June 2013) by following a low-carb Weight Watchers diet and working out every day.
While Jessica limited carbs, her diet wasn't as restrictive as Kim Kardashian's low-carb ketogenic diet, which limited Kim's daily carb intake to less than 60 grams. The low-carb, high-fat ketogenic diet has become increasingly popular as a way to produce rapid weight loss without hunger.
Simpson typically eats five low-calorie mini-meals a day, featuring lean proteins and fruit smoothies. Her daily meal plan looks like this:
- Breakfast: Green smoothie consisting of grapes, pears, avocado, spinach, lime juice and yogurt.
- Mid-morning snack: Turkey with apple slices.
- Lunch: “Brown smoothie” made with expresso, Stevia, whey protein powder and chia seed powder.
- Afternoon snack: Celery with a tablespoon of peanut butter.
- Dinner: Grilled steak and spinach salad with extra-virgin olive oil dressing.
Workouts Combine Cardio and Weights
Simpson's diet featured a mix of high-quality proteins like salmon and chicken and plenty of fresh vegetables and salads. For exercise, Jessica walks four to five miles every day (or 8,000 to 10,000 steps) and does yoga.
Simpson also works out at the gym for 45 minutes, four days a week, with her longtime trainer Harley Pasternak. "It's a lot of resistance training, lots of lunges and squats," Jessica told USA Today. "There are bursts of cardio throughout the workout as well."
While Simpson looks great after her dramatic weight loss, she said her true motivation to slim down stemmed from a desire to be a fitness role model for her two children. "I really do feel this need to be the best role model for my children," she said. "I want [my daughter Maxwell] to look up to me and want to be like me."
'I Was So Insecure After Gaining 70 Pounds'
Jessica feels unstoppable now, but admits her pregnancy weight gain made her depressed and insecure. "I was so insecure; I couldn't even believe what I weighed," she said. "I don't think I ever expected to see the numbers that I've seen on the scale."
Simpson's longtime trainer, Harley Pasternak, said the foundation of Jessica's workout regimen is daily walking. Pasternak, author of The Body Reset Diet, also trains Halle Berry, Lady Gaga, and Kim Kardashian. Harley said he and Jessica typically work out at the gym four days a week, combining 10 to 20 minutes of cardio exercise, 20 to 30 minutes of resistance training, and lots of flexibility moves.
Simpson said she worked hard because she really wants to look good for her upcoming wedding to former NFL star Eric Johnson. "When you see my dress, you’ll know [why I dieted and exercised so hard]," she said.
