Jardiniere is an Italian delicacy often found in high end gourmet shops. Save your money, here is an easy to make recipe that guests rave about.
Jardiniere ingredients
4 cups distilled white vinegar
1 cup water
1 cup sugar
1 tablespoon salt
1 tablespoon mustard seed
4 large carrots, peeled, trimmed, cut into coins
1 head cauliflower, cut into bite sized florets
1 red bell pepper, seeded, chopped
Directions
Combine vinegar, water, sugar, salt and mustard seed in large stockpot.
Bring to a boil then add carrots, cauliflower and bell pepper, return to boil.
Reduce heat, simmer until the veggies begin to turn tender, about 2 - 3 minutes.
Ladle into canning jars, cool, cover and refrigerate.
Jardiniere should be used within 3 weeks.
