It’s YOUR champagne vinaigrette salad!

One of the wonderful things about salads is that they can be made with the foods we love. The combinations are endless and vinaigrettes can be tweaked.

Champagne vinegar is made from champagne and is milder in flavour and acidy than wine vinegar.

Increase or decrease the amounts depending on the number of servings and amount of vinaigrette desired. A little bit more, a little bit less, ingredients can always be adjusted to taste.

Champagne vinaigrette ingredients:

  • 1/8 cup extra virgin olive oil
  • 1/8 cup champagne vinegar
  • 1 garlic clove, minced
  • 1/4 cup shallots, finely chopped
  • 1 tablespoon pine nuts
  • 4-6 basil leaves finely cut strips
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Pour the oil and vinegar into a small container and shake well. Add the shallots and garlic. Mix well but gently with a wooden spoon. Add the salt and pepper. Mix again. Add pine nuts and basil leaves and stir gently.

  • Avocado, peeled and cut in bite size pieces
  • Pear, peeled, cut into bite size pieces
  • Apple, peeled, cut into bite size pieces
  • Cherry tomatoes
  • Baby arugula
  • Cucumber, sliced
  • Fennel, finely sliced
  • Red or yellow peppers, thinly sliced
  • Endives
  • Walnuts
  • Roquefort cheese
  • Gorgonzola cheese
  • Goat cheese
  • Blue cheese
  • Finely chopped parsley

Place your favourite salad ingredients on a large plate or in a large low bowl. Pour the champagne vinaigrette over the salad. Sprinkle with finely sliced basil or parsley. Serve.

Champagne vinegar can be found in most specialty shops or supermarket specialty sections.
