You deserve it! You deserve something special, something to remember. It's the weekend. It's your time. After a long week of putting up with crap, problems and idiots, you deserve to kick back and enjoy your time.
Okay, I fully realize this dish may prove to quite a few of you that I have finally left my rocker and am on a straight ahead course to the loonybin but hey, at least I am heading there with a full stomach and licking my lips!
When I created this salad (which is what it is in a literal sense), it was simply by mistake. I was actually making some South American pastries and the ingredients of this salad were supposed to be the filling to the pastries. So as I was toiling along I reached over and took a fork full of the ingredients and tasted it. One taste led to another... then another. Well, I ended up eating half of the filling.
There is simply something stunning about the taste of a good quality smoked bacon and a real Cheddar cheese. When you add to this the subtlty of a sweet onion and the slight zing of hot sauce, dammit this is close to culinary heaven! Yes, it's fattening! Yes, it's loaded with cholesterol. It's also delicious and since we only go around this turn in life once, dammit, I am going to enjoy it! Mind you, I don't recommend eating this daily but on those times when you deserve a special yummy treat, screw it -- go for it!
Ingredients needed to make Cheddar Cheese and Bacon Salad (serves 2):
- 1/2 pound grated Cheddar cheese
- 1/2 pound smoked bacon, chopped
- 1 baby sweet onion, minced
- 1 Tbs. hot sauce
Steps:
- In a large bowl toss the Cheddar cheese along with the sweet onion and the hot sauce.
- In a medium saute pan or skillet, cook the bacon to your desired doneness.
- Drain the bacon of excess oil on a paper towel lined plate.
- Add the bacon to the salad, gently toss and serve (the bacon will naturally slightly melt the cheese).
