Get out of the traditional potato and macaroni salad groove this Memorial Day weekend and try a different side dish. This Carrot Salad is a delicious alternative that will add both crunch and sweetness to your holiday meal.
Carrot Salad (serves 4-6)
2 cup grated carrots
1 cup raisins, golden raisins or Craisins (or more or less, according to taste)
1/3 cup Ranch salad dressing (low fat is okay; mayonnaise or Miracle Whip salad dressing can also be used)
2 tsp. lemon juice (either fresh or bottled)
1 tsp. sugar
½ cup crushed pineapple (or more or less, according to taste)
1. Place grated carrots and raisins in a large mixing bowl.
2. Blend Ranch salad dressing (or mayonnaise or Miracle Whip) and lemon juice with sugar; add to carrots and raisins and stir until thoroughly mixed.
3. Add pineapple and stir.
This Carrot Salad goes great with other meals as well, so don’t wait for a summer barbecue; serve it all year long.
