The other day I was discussing how cooking yogurt will destroy its nutritional value. It would follow logically that yogurt is not a good medium for a marinade, and I believe that is the case. Any sauce that contains yogurt should be served separately with the food, and not used during cooking.
An example of this is the following grilled salmon with orange yogurt sauce. Taste of Home created a marinade-sauce combination in place of marinating in yogurt. Don’t worry; serving the sauce will be every bit as tasty as trying to marinate with it.
So take this good idea for a salmon dish and do it this way:
Grilled Salmon Fillet with Orange Yogurt Sauce
Ingredients:
Marinade:
1/3 cup orange juice
¼ cup lemon juice
1 Tablespoon orange zest
1-1/2 teaspoons sugar
1 teaspoon lemon zest
1 teaspoon olive oil
1-1/2 teaspoons fresh rosemary, minced
¾ teaspoon minced fresh basil
½ teaspoon salt
¼ teaspoon ground white pepper
1 salmon fillet (1-1/4 pounds) cut into 4 pieces
Orange Yogurt Sauce:
1 cup plain yogurt
2 Tablespoons orange juice
1 Tablespoon sugar
1 Tablespoon orange zest
Combine the first 11 ingredients in a mixing bowl. Set aside ¼ cup for use in cooking. Pour this marinade into a large plastic bag and add the salmon. Turn to expose all sides of the salmon to the marinade and refrigerate for 30 minutes.
Coat a grill pan or grill with a wire rack with nonstick cooking spray. Drain the salmon and place it skin side down on the grill, discarding the marinade. Grill for 5 minutes over medium-high heat and turn. Baste with the reserved marinade.
Cook for 5-10 minutes longer, until the salmon is done.
In a small bowl, mix the sauce ingredients and serve with the salmon.
This dish will go well with rice, especially risotto, which is what I would prepare as a side dish. You will have room for dessert when this is your dinner.
