Normally, sausage is a meat that we tend to have only at breakfast. It's uses are multi-folded! We enjoy it as an accompaniment to eggs and toast, pancakes and waffles, as well as the center of a hot buttermilk biscuit. Over time, this breakfast meat made its way into a popular breakfast casserole that often shows up on holiday buffet tables.
Let's not confine sausage to just the morning hours! Let's invite it to dinner with the recipe I'm sharing, which is for "Sausage and Noodle Casserole". This is a good and hearty main dish and will be a creative way to utilize sausage. It's also spicy, which get this from onions, peppers, tomatoes and a few seasoning.
Incredibly easy to make, you begin by browning sausage while you cook some egg noodles. When the sausage is ready, onions and peppers go in the skillet for sauteeing. Once this is ready, the drained noodles are combined with the sauteed vegetables, in addition to canned tomatoes, tomato sauce, soy sauce, Worcestershire sauce, chili powder, water and sour cream. This is placed in a casserole dish and topped with grated cheese. It's bakes until it's hot bubbly. Simply add coleslaw, panned apples, a hot bread, a beverage and a dessert and you're good to go!
Any of your favorite flavors of sausage can be used here, such as the mild or hot, depending upon how spicy you want the casserole to be. Have leftovers? They reheat very well in the microwave, but I don't suggest freezing this casserole due to the sour cream. Sour cream doesn't take to freezing well, as when thawed, it would separate and become watery. However, this is so very good you may not have to think of having leftovers!

SAUSAGE AND NOODLE CASSEROLE
- 1 pkg. egg noodles, cooked and drained
- 1 lb. sausage
- 1 large onion, chopped
- 1/2 green bell pepper, chopped
- 1 (8 oz.) can tomato sauce
- 1 (14 oz.) can tomatoes
- 1 teaspoon soy sauce
- 1 teaspoon Worcestershire sauce
- 1 teaspoon chili powder
- 1/2 cup water
- 1 cup sour cream
- grated sharp cheese for topping
Prepare the noodles and set aside. Brown the sausage in a large skillet and drain. Remove all but about 1 tablespoon of the fat. Add the onion and pepper to the skillet and saute until tender. Combine the cooked noodles with the sausage and sauteed vegetables. Add remaining ingredients, except for the cheese and place in a shallow 2-1/2 qt casserole dish Top with grated cheese, as much as desired. Bake at 350 degrees until hot and bubbly. Yield: 6-8 servings.
