How often do you ever have an intimate dinner with one other person? With most people, having a quiet dinner for two happens very seldom! Many times, we're all so busy with work, hobbies, etc., that having a simple dinner with our significant other is a rare occurance. You also may find it hard to go out to eat at a very nice restaurant because of the expense. And when you get to the end of the month, we have to watch those last few dollars until payday!
What to do in this situation? Prepare a nice dinner at home! The recipe I'm passing along is one that serves two and is very special and wonderful eating. This recipe, "Pepper Steak", serves two and is easy made very quickly and easily. When you think of "Pepper Steak", you may be thinking of the classic Chinese dish that has green peppers. This one isn't like that, in that the pepper comes from freshly ground black pepper.
Even if you work all day, you can come home in the evening and make this is just a few minutes. You begin with New York strip steaks. Freshly ground cracked pepper and salt are mixed and pressed into both sides of each steak. In a saute pan, you melt butter and saute the steaks. You then remove the steaks and to the juices in the pan, you add brandy and cream. All that's left to do is to season the sauce according to personal taste and pour this sauce over the steaks. Add a baked potato, a green salad and a hot bread and you'll have a special dinner for you and someone special!
When making this dish, I like to use a non-stick skillet. This enables the steaks to cook easily without sticking. If you decide to prepare this dish with the menu I suggested of a baked potato, green salad and a bread, you can cook the potatoes in the microwave while you make the salad. A good store-bought fresh bread would take care of the bread, and the steaks can be made last since they cook in a short amount of time. A fast, easy and not very expensive way to have a good meal that could otherwise cost much more at a restaurant!

When you are looking to spend a nice dinner with someone, prepare this and enjoy your quality time with that someone special!
- 1/2 to 1 tablespoon freshly cracked black pepper
- 1/2 teaspoon salt
- 2 New York strip steaks
- 1-1/2 tablespoons butter
- 1/4 cup apple brandy
- 1/4 cup cream
- salt to taste
In a small bowl, mix the pepper and salt together. Press into each side of the steaks. In a medium sized saute pan, melt the butter over medium high temperature. As soon as the butter is hot, keep the pan hot and add the steaks. Saute the steaks for about 3 minutes on each side over medium high temperature for medium rare.
Whisk the brandy and cream into the pan. Stir to scrape up all the juices from the bottom of the pan. Just before the cream boils, season it pour it over the steaks. Serve immediately. Yield: 2 servings.
