On May 2, Inspiration/Vita Bakes Bakery LLC will make its debut at the Las Olas Wine & Food Festival in Fort Lauderdale. The new company is geared to focus on nutritiously fortified baked treats and will cater its goods to a wide market to include consumers with dietary restrictions or health concerns.

"As a type 1 diabetic I can't advocate eating ANY baked goods that are not made low carb by being made with coconuts or almond flours," stated Susan Deering, who is not only diabetic but also the parent of a child with food allergies. "If this place does that I'M SO THERE!""

According to the Food and Nutrition Information Center at the U.S. Department of Agriculture, 86 percent of Americans indicate that they have concerns about the nutritional content of the food they consume. Only 60 percent have actually altered their eating habits due to these concerns, however. Inspiration/Vita Bakes hopes to change this paradigm with delicious and nutritious options that will help consumers make healthier choices for their diets and their lives.

All Inspiration/Vita Bakes Bakery products provide close to 25 percent of the recommended daily allowance of 15 essential vitamins and contain no trans fats. Sugar-free and gluten-free desserts will provide added options for individuals with diabetes or celiac disease and will fill a still vastly underserved niche in the marketplace.

"For the tons of people who are living with celiac's or are gluten intolerant a bakery that caters to their needs would be wonderful," Deering continued.

The products available from Inspiration/Vita Bakes Bakery will include a line of sugar-free and gluten-free baked goods to meet the needs of customers living with diabetes or those sensitive to gluten. The American Diabetes Association estimate that nearly 26 million men, women and children in the United States suffer from this disease and can benefit from a low-sugar dietary plan. Celiac disease is another major concern and affects one out of every 133 U.S. residents; adopting a gluten-free diet is the recommended treatment for patients living with celiac disease. The products available from Inspiration/Vita Bakes Bakery can provide tasty options for these individuals and for others interested in pursuing a healthier way of life.

"I wish they would go further and include a wider group of food allergies," added Deering. "A peanut free bakery would change the world! You could easily get the food allergy network involved in promoting it!"
