Indian Cooking Made Easy

The aromas of cinnamon and sweetness fill the air with home made Chai boiling on the stove. This morning at Williams Sonoma on Michigan Avenue, author and friend Anupy Singla invited friends and bloggers to learn more about Indian cooking made easy. Her latest book, “Vegan Indian Cooking, 140 Simple and Healthy Vegan Recipes” will now be sold at the store. In addition, her patented and personally designed “spice box” Masala Duba is exclusively sold at Williams Sonoma will also be available.

The differentiating design of her Masala Duba includes measuring spoons, a stainless steel solid design and a half rim for easy measuring level spoons for a recipe. Included in the Masala are tins to contain the main Indian spices including:
Cumin
Turmeric
Coriander
Gaham Masala
Red Chili
Brown Mustard Seed

She demonstrated a typical breakfast including a homemade bread called “roti”. She explained that although our US culture believes the “no” is the bread of choice. Nom as she grew up was a treat and “roti” was the home made starch. Nom is cooked in a Thandori style oven while roti can be cooked at home.

She stuffed the roti with spicy potatoes called “Aloo parantha”. If you stuff a “roti” you get a “parantha”. To compliment the Aloo parantha, she made a spicy tofu omelette from the cook book. The scent in the air was amazing and the taste even better. I, myself, am never sure what to order in an Indian restaurant and hearing more of the terms and what they are at the demonstration made me more at ease.

Anupy makes no claims that she is a “strict” vegetarian but rather does what works for her and her “food journey”. This may explain the meat recipes in her first book and the follow up book being a vegetarian mention in the title, “Vegan Indian Cooking.” She has a friendly style and is comfortable with the crowd being an experienced TV reporter and on air personality which makes the demonstrations fun and entertaining.
