In memory of Mother: Recipe for peppery papaya meat sauce

Ingredients: 1 small, still-green papaya, 10 – 12 small red peppers, 2 cloves garlic, 1 large onion, 4 tbsp. mustard, 2 tbsp. salt, 1 tsp. curry powder, and 1 ½ pints of vinegar.

Directions:

  • Boil papaya in its skin for about 5 minutes. Cool and then cut into thin strips. Chop peppers, after removing and discarding seeds. Chop onion and garlic together until fine. Mix all ingredients in the vinegar. Heat and simmer for 20 – 30 minutes. Cool. Bottle and keep in the refrigerator for use as needed.
