There were plenty of grapefruit trees in the orange grove near my home. Mother seemed to enjoy eating a grapefruit in the morning. She encouraged me to eat one, too. But, grapefruit wasn’t something I was interested in, until I became an adult.
Now, I did enjoy a cup full of grapes, when Mother bought them at her friendly, neighborhood grocery store. I, too, delight in purchasing grapes, as well as grapefruit, at my neighborhood store, which is Fresh Pride at 8506 Chesapeake Boulevard in Norfolk, Virginia.
The following recipe, “Grapefruit and Grape Salad,” is from my mother’s cookbook:
Ingredients: 2 grapefruit (pulp removed and diced), 1 bunch of grapes, washed and cut in half lengthwise, 1 ½ tbsp. creamy salad dressing, ½ cup pecans (shelled and coarsely chopped), ½ cup small marshmallows or large ones diced.
Instructions: Mix the fruits, nuts and marshmallows. Coat them thoroughly with the salad dressing. Add more dressing if necessary. Place individual servings on lettuce leaf. Serves 3 to 4.
