In memory of Mother: Recipe for broiled grapefruit

It did not matter whether it was pink or just a plain grapefruit, Mother believed in the nutritional quality of eating a grapefruit in the morning. Mother simply added a little sugar on top before eating the juicy pulp of the grapefruit. She claimed that eating a grapefruit everyday was a great way to stay healthy. Maybe, Mother was on to something. Read below the nutritional value of grapefruit:

The pulp contains an unique pectin (in membranes and juice sacs---not in juice) that lowers blood cholesterol and reverses atherosclerosis (clogged arteries) in animals. It has anticancer activity, and appears particularly protective against stomach and pancreatic cancer. The juice of the grapefruit is antiviral and high in various antioxidants, especially vitamin C.

The following is a recipe for broiled grapefruit:

Ingredients: ½ grapefruit, honey, cinnamon, butter, sugar

Directions: Cut grapefruit in half and run knife between sections and around peel to free the sections for easy eating. Remove core and some of the surrounding pulp to make a hole in the center. Fill hole with honey and 1 teaspoon of butter. Sprinkle top with sugar and cinnamon. Place under broiler until top begins to brown. This will require only a few minutes. Or grapefruit can be baked (rather than broiled) for 15-20 minutes in oven preheated to 400 degrees.
