I never heard of an avocado when growing up in Florida. But, I did hear of an “alligator pear.” I never knew they were one in the same. In my neck of the woods, the alligator pear was grown more for decoration, rather than something one ate. Well, this country girl has certainly learned a lot since then.
The avocado helps with circulation, lowers cholesterol, and dilated blood vessels. It’s main fat, monounsaturated oleic acid (also concentrated in olive oil), acts as an antioxidant to block artery-destroying toxicity of bad-type-LDL cholesterol. It is one of the richest sources of glutathione, a powerful antioxidant shown to block thirty different carcinogens and to block proliferation of the AIDS virus in test tube experiments.
My husband enjoys making guacamole or avocado dip. Here’s a recipe we use:
Ingredients: 1 avocado or 2 small ones, 1 medium-sized onion (diced), Tabasco (optional), 1 tablespoon of lime juice, ½ teaspoon of chili powder (optional), 1 clove garlic (crushed), salt and pepper to taste
Directions: Peel avocado, remove seed, and mash in a bowl, using fork or a potato masher. Add lime juice, onion, garlic, and seasonings, stirring them in thoroughly. Add salt and pepper to taste, plus 2-3 drops of Tabasco if one wants to pep up the dip! By varying the amount of lime juice only slightly, one will also make the dip thicker or thinner, for use either as a spread or with thin chips.
