A Brief on Capers

If you are not familiar with capers, they are a delicacy from the Mediterranean. They are handpicked and pickled immature flower buds. They look like green peppercorns. The Cosmopolitan salad is a great way to introduce capers to your palate.

Cosmopolitan Salad

Half a head of dark green leaf lettuce

2 tablespoons Feta cheese, crumbled

2 tablespoons Swiss cheese, finely or fancy shredded

2 tablespoons bacon, cooked and crumbled

2 tablespoons tomatoes, seeded and finely diced

2 tablespoons capers, drained

2 tablespoons walnuts, chopped

Cosmopolitan dressing (recipe to follow)

Garnish

Pitted Kalamata olives

Croutons

Instructions:

Wash and dry the lettuce. Shred it finely. Drizzle Cosmopolitan

dressing over the lettuce. Arrange all other ingredients on top of lettuce in

rows. Garnish with Kalamata olives and croutons. Serve immediately.


Cosmopolitan Dressing

Finding the perfect salad dressing to complement the briny and tart flavors of

the ingredients in the Cosmopolitan salad was quite a challenge. We needed

a dressing that would complement these flavors but also. I tried many

different recipes to get just the right one. I believe this is the best.

Easy Cosmopolitan Dressing

Bottle of Golden Italian Salad Dressing

Bottle of Balsamic Vinegar

Sugar

Buy a good quality Golden Italian Salad Dressing. Put it in a blender, then add 1 ounce of balsamic vinegar and 1 teaspoon sugar for every 3 ounces of Golden Italian dressing per 3 ounces of Italian dressing. process.

Check for personal flavor preference. Adjust accordingly And voila!

If you don’t like to take the easy road, or want to try something different:

Here’s one of the original versions. You decide.

¼ cup honey

½ cup white vinegar

½ cup water

½ cup canola oil

¾ cup balsamic vinegar

¼ cup grated Romano cheese

1 teaspoon salt

1 teaspoon black pepper

2 teaspoons lemon juice

1 teaspoon garlic, minced

1 teaspoon dried parsley flakes

1 teaspoon of dried oregano

1 teaspoon of crushed red pepper flakes

Combine all ingredients in a blender. Process until evenly combined.

Add more water if needed. Chill before serving. Will last three weeks if

refrigerated.
