Can it be? Another International Hummus Day is upon us so soon? Joking aside, May 13 is International Hummus Day, and devotees of the chickpea mash that has found its way onto the menus of virtually every cuisine imaginable has a place of honor at the Upper West Side restaurant, Bustan. There between May 11 and May 15, the high-protein, fiber-rich culinary staple of the Middle East will appear in some form at every course — including dessert.
There are 16 iterations in all. Hummus will provide a delectably edible foundation for mixed wild mushrooms, for braised beef cheeks, and for charred chicken liver and onion. If those aren’t sufficiently adventurous for your palate, picture hummus partnered with grilled octopus, fire-roasted tomato, and a sunnyside-up egg. Or perhaps you’d prefer your hummus as a component of a fully loaded crispy potato, served with duck prosciutto and fresh salsa.
Desserts? There is chickpea, chocolate, and caramel bar, and tahini ice cream with candied kamquats, caramelized chickpeas and bittersweet black tahini.
The Hummus Festival menu will be available nightly for dinner, alongside Bustan’s full a la carte menu, and during brunch on Sunday, May 11.
