Orchestrate Management has brought Des Moines Centro, Django, Zombie Burger + Drink Lab, Gateway Market, Raccoon River Brewing Company, and South Union Bread Cafe and Bakery. Now the management group will bring Des Moines a new restaurant project. Orchestrate has a number of talented chefs working under restaurant guru George Formaro. Now, once a quarter, those other chefs will get their chance to shine.
Orchestrate Management has come to an agreement with Hoyt Sherman Place (1501 Woodland Avenue) to open a pop-up restaurant every quarter to showcase the talents of their young chefs. The premiere of this project will feature Chef Chris Diebel and Chef Scott Stroud's Southern-themed restaurant Bubba, which will be open January 10 through January 12, from 5 p.m. to 11 p.m. Diebel and Stroud hope that the concept will be a hit with Des Moines diners and lead to a permanent restaurant at some point in the future.
Those wishing to give Bubba a try can go to the pop-up's website to check out the full menu and make reservations. Dinners are $60 for a four-course meal, $75 if diners want to include drink pairings (prices include tax and tip). Diners can choose from a number of dishes for each course, including the likes of Shrimp & Grits, Seafood, Pirlau, Smoked Brisket, and Sweet Tea Braised Pork. A cash bar will also be available.
