How to make sweet potato fries

 You'll need these Ingredients:

4 sweet potatoes (about 2 lbs.)

¼ cup extra virgin olive oil

1 Tbs chopped fresh rosemary

1 tsp coarse salt

¼ tsp red pepper flakes

Preheat the oven to 500 (degrees) F.

Remove a slice of potato and place the cut side down on the cutting board (or counter top, large plate, whatever you're using). This prevents the potato from rolling as you're cutting it. With a knife, slice each potato in half lengthwise, then cut into ½ “ edges. In a bowl, combine all the ingredients.

Place the potato wedges in a bowl with the remaining ingredients or with one of four seasoning blends that are mentioned further below. Toss the potatoes with the oil-spice mixture until evenly coated. Season with salt and pepper, if you want. Grease a baking sheet.

Arrange the seasoned potato wedges in a single layer on the greased baking sheet for quicker baking. For crispier fries, place potatoes at least 1” apart. (if they're placed too closely, they'll steam instead of bake.) Roast for 10 minutes (or until tender and lightly brown, turning once).

The Four Seasonings

If there's no rosemary on hand, don't fret; you're bound to have other spices and seasonings to make any one of the following (these can also be used in simple fish, chicken and veggie recipes):

Hot Pepper-Oregano

¼ cup of olive oil

1 tsp oregano

1 scallion, chopped

1 tsp coarse salt

¼ tsp cayenne pepper

Basil-Garlic

¼ cup olive oil

1 Tbs chopped fresh basil

2 cloves garlic, minced

1 tsp coarse salt

¼ tsp black pepper

Pepper and Cumin

¼ cup of olive oil

1 Tbs chopped red pepper

1 tsp coarse salt

½ tsp ground cumin

¼ tsp crushed red pepper

Thyme and Citrus

¼ cup of olive oil

1 Tbs chopped fresh thyme

1 Tbs orange rind

1 tsp coarse salt

¼ tsp seasoned pepper blend
