How to make Olive Garden Minestrone soup

There are many websites with copy cat recipes. This one for Olive Garden Minestrone soup is the closest tasting to Olive Garden’s that I have found. Even the Olive Garden website lists some of their recipes, but their minestrone soup is not one of them.

1 Tbsp. olive oil
2 tsp. minced garlic
1/8 cup celery chopped
1/4 cup onion chopped
1/4 cup green beans
1/4 cup carrot chopped
1/4 cup zucchini chopped
2cups vegetable broth
7oz. diced tomatoes
1.5 cups hot water
1 can kidney beans
1 can white beans
1 Tbsp. parsley
3/4 tsp. oregano
1/4 tsp. basil
1/4 tsp. pepper
3/4 tsp. salt
1/8 tsp. thyme
1 cup fresh spinach
1/4 cup pasta shells

• Sauté celery, onion, and garlic in olive oil; add green beans
• Stir in vegetable broth, diced tomatoes, hot water, kidney and white beans, carrot, and zucchini
• Add in all seasonings
• Bring to a boil, then simmer for 20 minutes
• Add in spinach and pasta
• Cook an additional 20 minutes

Note: It may not seem like very much pasta but don't over do it. The pasta will expand quite a bit and if you do more then the 1/4 cup the recipe calls for the noodles will soak up all the broth.
