This dish needs no introduction to anyone. Everyone has enjoyed this dish some or the other time in their life. But the difference is , it is now cooked in the healthiest way ever.
Ingredients:
1/2 lb of boneless and skinless chicken, cut into small cubes
A bunch of fresh and green spring onions, cut in small pieces
1 tablespoon of oil
For the sauce:
3/4 tablespoons of black peppercorns
3/4 tablespoons of finely chopped garlic
1/4 tablespoon of ginger paste
1/2 tablespoon of freshly ground black pepper
11/2 teaspoons of dark soy sauce
1/4 teaspoon of ajinomoto (optional)
2 tablespoons of corn flour
11/2 tablespoons of white wine vinegar
3/4 teaspoon of oil
2 cups of chicken stock
For marination:
3/4 teaspoon of salt
1/4 teaspoon of ajinomoto ( optional)
11/2 teaspoon of corn flour
Method:
1) Marinate the chicken cubes in all the marination ingredients and refrigerate for 1 hour.
2) Heat the pan with oil and stir fry the marinated chicken for 5 minutes at low heat. Drain the excess oil in a kitchen towel and keep the chicken aside.
3) Heat some more oil in the pan and add ginger, garlic and peppercorns at low heat. Cook till the color changes a bit. Now add the black pepper, soy sauce, ajinomoto, vinegar and the chicken. Add the chicken stock and cook till the chicken turns tender. Add enough water to get the sauce.
4) Add vinegar and spring onions and serve hot with steamed rice.
