I hate making lunches. I mean it is unnatural how much I just do not like making my kids’ lunches. I dread it. Every. Day. I wish I could be one of those Martha-Stewart-Betty-Crocker-Stepford-Moms coming up with inventive, creative fun little smiley-face treats for my little darlings every day, but as it is I wake up and barely have enough time to slap some mayonnaise and turkey on a couple of slices of bread before we have to be out the door. My husband sweetly volunteered to get their little lunch and snack boxes ready for school the night before. That lasted less than one week.
And my kids’ school is a nut-free school, so that means most of the packaged stuff is out because, if you look closely at the label, it will tell you that is was processed in facility where there were nuts, which is not a bad thing really, because whole foods are so much better for them. But it is a bit of a challenge to get my son to eat anything healthy these days, and he will only tolerate raw carrots for so long. So what’s a mom to do?
