How to make cheese biscuits

Cheese biscuits sound decadent and oh, so delicious and they are. So, how do they fit into a healthy diet? Simply put, moderation. With a regular and low carb option, this recipe is customizable to your dieting style. Just remember to watch your portions.
 
Mississippi Cheese Biscuits
  • 2 cups all-purpose flour or coconut flour (low carb option)
  • 4 teaspoons baking powder
  • 1 to 1 1/2 cups finely grated Cheddar cheese
  • 1/4 cup vegetable shortening or lard (low carb option)
  • 1/4 cup butter
  • 2/3 cup milk
  1. Preheat oven to 425 degrees F.
  2. In a large bowl, mix together flour, baking powder and 1 cup of Cheddar cheese.
  3. Add shortening and butter, cut into flour mixture with a pastry blender until mixture resembles coarse meal.
  4. Make a well in center, pour in milk and stir with a fork just until dough forms a ball.
  5. On a lightly floured board, knead dough lightly, about 15 times, until smooth.
  6. Roll out dough to 1/2-inch thick.
  7. Cut with a 2-inch biscuit cutter.
  8. Place on greased cookie sheet and bake 10 minutes. 
  9. Remove from oven.
  10. Sprinkle tops of biscuits generously with remaining grated cheese. 
  11. Return to oven and bake until cheese is melted, about 3 minutes.

Serve warm. Goes well with A Cowboy’s Magnolia Princess Garlic Butter.
