Beignets, pronounced bin-yays, are a popular southern treat that is served all over New Orleans, but especially at Mardi Gras. In Portland, there are few doughnut shops that sell beignets, but most places will only make them by request. Here is how you can make these yummy treats at home.
You Need:
- 1/3 cup whole milk
- 1 1/2 cup buttermilk
- 3/4 oz. compressed yeast
- 3/4 tsp sugar
- 5 1/2 cups bread flour
- 1/2 tsp baking soda
- 3/4 tsp salt
- Canola oil for frying
- Powdered sugar
Makes 24 mini beignets.
- In a heavy saucepan, heat the milk over medium heat until small bubbles form. Remove from heat and temper in buttermilk. Add yeast and sugar. Pour mixture into mixing bowl.
- Add all the dry ingredients and mix with an electric mixer on low using a dough hook until combined. Place dough in a greased plastic container, covered, in a warm, dry place for 30 minutes Turn dough onto a floured surface and form a ball. Roll out dough on a floured surface, and then cut into 1 1/2 inch squares. Place beignets on a sheet pan lined with greased parchment paper. Wrap with plastic wrap and store in the fridge until ready to cook.
- In a large pan and deep frying pan, bring oil to 350F. Fry beignets until puffed and golden brown. Drain on paper towels and sprinkle with powdered sugar. If desired, serve with fresh berries or a warm blueberry sauce.
