The changes seem to be coming from a combination of better diagnoses of wheat intolerance disorders and people who believe that they feel better if they do not eat gluten. Some families with autistic and Asperger’s children believe not eating wheat is beneficial to their children.
Fairmont Hotels & Resorts, Omni Hotels & Resorts and Ritz-Carlton Hotels are a few of the chains that have added gluten-free food to their menus. The Ritz-Carlton Naples, Florida introduced gluten-free two years ago.
Omni Hotels will have a gluten-free breakfast buffet station companywide. The station will include gluten-free cereals, granola and a variety of breads and muffins. It has its own table, with a toaster, so your food will not come in contact with wheat.
Walt Disney Parks and Resorts handles requests on a guest-by-guest basis.
Kimpton's Hotel Palomar San Francisco offers gluten-free items, such as pretzel twists, in its minibars. Kimpton's Hotel Monaco in Portland, Oregon has gluten-free items in its minibar.
United Airlines and U.S. Air will accomodate your diet with 24-hours notice.
