When we're on the go, one food that we eat quite often is a sandwich. This is the typical staple packed in the lunchbox and they are fast and easy. Nearly all sandwiches are eaten cold, but sometimes, a hot sandwich is very welcome, especially when it's cold outside. I'm sharing a recipe for a hot and hearty sandwich that can even count as your main course at lunch or dinner, and that's for "Spicy Beef Boats".
These sandwiches are large and if you, or those you're serving have a hearty appetite, this will hit the spot perfectly. This isn't just an ordinary sandwich, either. You begin by browning ground beef and sausage, then you add grated cheese, chili powder, mushroom soup and if you like them, chopped nuts and/or sliced stuffed olives. I normally don't add the nuts, but I do include the olives. Either item is optional. You also use the Hoagie rolls. The rolls are hollowed out and filled with the meat filling. They are then wrapped and baked for about 10 minutes. If desired, they may be topped with shredded lettuce and chopped tomatoes. These make large sandwiches and you could cut them in half, if you prefer not such a large sandwich.
When you hollow out the rolls, I usually sliced them in half and remove the insides with a fork, saving the crumbs. The crumbs can be ground in the food processor to make fresh bread crumbs that you can use in other recipes. Once they're ground, they can be stored in a Ziploc bag or a jar with a tight cover. For long term storage, I would suggest freezing them. If you plan to use them pretty soon, you could just keep them under refrigeration. Then, when a recipe calls for fresh bread crumbs, you'll have them on hand!
These sandwich are indeed different, but they are very good. They are a nice change from the cold sandwiches we have so often and you could even serve a bowl of soup along with this to make the sandwich even better and to make your meal more filling. When you've gotten tired of cold sandwiches, try this hot and hearty sandwich for a good change of pace!
SPICY BEEF BOATS
- 1 lb. sausage, browned and drained
- 1 lb. ground beef, browned and drained
- 1 cup chopped walnuts (optional--I don't use them)
- 2 cups grated American or Cheddar cheese
- 1/2 cup sliced olives (optional)
- 1 can cream of mushroom soup
- 1 tablespoon chili powder
- 6 Hoagie rolls
Combine both browned and drained meats, along with the walnuts, cheese, olives, soup and chili powder in a skillet. Heat for 5 minutes, stirring occasionally. Slice the Hoagie rolls in half and hollow out the halves, using a fork (reserve the crumbs to make bread crumbs for other dishes.) Place meat mixture inside one half of the roll and replace the top. Wrap each sandwich in foil and bake in a preheated 400 degree oven for about 10 minutes. If desired, sprinkle each sandwich with shredded lettuce and chopped tomatoes, if desired. Yield: 6 servings.
