Spring is full of firsts, from the first time of the year you wear shorts to the first garden blooms. For those who love food, the most important first of the year is the first time you fire up that outdoor grill. The first real, homemade grilled burger of the year sets the tone for the season to come, letting everyone look forward to the picnics and BBQs ahead.

What makes this burger so special? It's a classic, for starters, made with real, lean ground beef. This recipe improves on a classic with the addition of zesty horseradish --just enough to add a delicious kick, while preserving the integrity of the burger. Grilled onions and sharp cheddar cheese pair perfectly with horseradish burgers for a combo your guests will request time and again.

Make zesty horseradish burgers as your breaking-in-the-grill burgers this year, and by the time summer holidays arrive, you won't even need the recipe. You'll have the proportions down pat.

Horseradish Burgers Recipe


1 lb. lean ground beef
2 Tbsp. prepared horseradish
2 tsp. Dijon mustard
Salt and fresh-ground black pepper, to taste
4 thick slices red onion (do not separate)
2 tsp. olive oil
4 oz. Cabot Sharp Cheddar, sliced
4 sourdough or ciabatta rolls
Lettuce leaves

Directions: Preheat grill. In a medium bowl, combine ground beef, horseradish, mustard, salt and pepper. Shape into equal-sized burger patties, 3/4" thick. Brush onion slices and grill with olive oil. Place burgers and onion slices on grill and cook until done, about 4 minutes per side (for medium-rare). Cook onions until browned. Toast rolls if desired.

Top burgers with cheese and cover with grill lid or loose foil about 1 minute, until cheese is melted. Serve burgers on rolls with lettuce, grilled onions and your favorite condiments. Serves 4.
