This week was a week for plenty of comfort foods. It was any wonder why my head ached four days out of five this week. My Writers Access profile was still pending. Jobz For Writers expected me to jump through hoops with their urgent orders (usually last minute) and the trouble with paying my bills through Mobilligy without setting up a bank account first. Thank goodness there were some frozen meals at the ready. There were so many low fat foods liked by me, they had to be categorized by nationality.
The Bible said two things about food and one’s body:
1. Daniel 1:8-9
8 But Daniel resolved not to defile himself with the royal food and wine, and he asked the chief official for permission not to defile himself this way. 9 Now God had caused the official to show favor and compassion to Daniel, (NIV)
19 Do you not know that your bodies are temples of the Holy Spirit, who is in you, whom you have received from God? You are not your own 20 you were bought at a price Therefore honor God with your bodies. (NIV)
With that in mind, below was my list of top four favorite comfort food categories.
- Italian My favorites in this category were, Spaghetti, lasagna, manicotti, elbow macaroni, and bowtie pasta with a favorite meat, cheese, and tomato sauce.
- Mexican My favorites here were nachos, tacos with cheese and or a favorite meat, chips and salsa, burritos, enchiladas, and Spanish rice.
- Asian After being on Okinawa for four years nothing beat the real thing. My favorite was Mom’s Gyoza, and Shrimp Fried Rice. My favorite Chinese foods were Stir Fry because any type of meat was fine to use and egg rolls. Like Japanese food, nothing beat visiting China, but till then, everyone got the Texas version of Asian food.
- American My favorites were anything with chicken, turkey, beef and fish. For me, if there weren’t a way in making a breakfast casserole or putting it between two pieces of bread, using my four quart crock pot to make homemade stew or soup was fun.Cleaning the drum was not.
Now that one breakfast, of IHOP pancakes and one turkey dinner remained in my freezer, it was time to make more of my frozen low fat favorites.
