Honey glazed red potatoes are perfect for everyday or special occasions

Potatoes are economical, nutrient dense food, virtually fat-free and available year-round. One potato contains about 1/3 of the recommended daily amount of vitamin C, 1/3 of the recommended daily amounts of vitamin B6 and potassium, and significant amounts of iron, magnesium, folic acid, and copper. The essential trace elements manganese, chromium, selenium and molybdenum can also be found in the potato, which is a high-fiber vegetable, containing about 10% of the daily desired amount of fiber. Potatoes even contain some high-quality vegetable protein!

Liberty Market has a regular supply of organically grown potatoes for your enjoyment; pick up some non-GMO red potatoes and try the following recipe, which is quick and easy enough for a weekday supper but can also make an impressive presentation on your holiday table. You can find some very nice local honey at Liberty Market, as well as organic non-GMO onions and unprocessed sea salt.

Honey glazed red potatoes

  • 2# red potatoes, quartered
  • 1/4 cup diced onion
  • 2 tablespoons butter, melted
  • 2 tablespoons honey
  • 2 teaspoon dry mustard
  • 1/8 teaspoon sea salt
  • 1/8 teaspoon ground black pepper

Preheat oven to 375 degrees F and lightly coat an 11x7 inch baking dish with nonstick cooking spray.

Put the potatoes in a single layer in prepared pan and top with onion. In a bowl, combine melted butter, honey, mustard, salt and pepper and drizzle over the potatoes and onions in the pan.

Bake for 35 to 45 minutes or until potatoes are tender, stirring halfway through the cooking time.
