Honey chicken skewers

2 garlic cloves, minced
½ cup stout beer
1 tsp. red pepper flakes
½ tsp. Dijon mustard
¼ cup soy sauce
¼ tsp. pepper
1 tbsp. olive oil
¼ cup shallots, chopped
6 chicken thighs, cubed
Cilantro to garnish

Whisk together the garlic, honey, beer, red pepper, mustard, soy sauce, and pepper. Once the mixture is well combined, add in the chicken. Chill at least 1 hour (or you can store in the fridge overnight). Your skewers will also require some preparation. Make sure to soak them in water for 30 minutes before you remove your chicken from the fridge. Add the chicken to wooden skewers. Over medium heat, cook the shallots in the olive oil for about 5 minutes, or until soft. Add the marinade from the chicken and heat until the mixture reaches a boil. Reduce heat, stirring continually, cooking about 8 minutes until it thickens. This will be your glaze

Brush your grill with oil and preheat to medium high. Brush the chicken with the glaze and grill about 10 minutes or until cooked through, turning regularly. Garnish with cilantro and serve!
