The Thomas Hill Organics Market Bistro and Wine Bar have their own way of preparing food. Hill’s emphasis is on health and creativity.
Serena Harkey, Wine & Service Manager, explained, “We are here to keep your palate entertained. Our meals are interesting as well as delicious. We want our guests to leave full and happy.”
Head Chef Julie Simon uses produce from Hill’s own organic farm as well as other sustainable and organic local farms. Their grass-fed beef, lamb and poultry is also from local farms.
You would be surprised what Hill can do with a burger or sandwich. Their braised pork belly and beef burger is original with mozzarella cheese, bacon, onions and a fried egg on the top.
The PC Cattle burger is filled with Romesco, Cambozola cheese, Applewood smoked bacon, caramelized onions and roasted garlic aioli.
For a tasty sandwich, the cold smoked salmon sandwich includes Sriracha Aioli, onion, avocado and sunflower sprouts. Burgers and sandwiches are a meal at Thomas Hill’s Bistro.
Their Green muscles appetizer is baked with sweet Thai chile sauce and toasted oats to add a little texture.
Hill’s menu surprises guests with dishes not usually seen in other restaurants.
On the Castillian (Spanish) barbeque menu, try the tiger shrimp tacos for a new taste treat. It is served with Mojo de ajo, corn tortilla, heirloom tomato, avocado salsa and fresh cilantro.
Another Spanish influenced dish, the smoked nectarines, fruit, cheese, curried crème Fraiche, Feta cheese, toasted almonds and mint are baked in the oven.
The roasted duck breast entrée offers even more flavor combinations with roasted pear, Quinoa chile relleno, Oaxacan mole, pomegranate seeds queso fresco and cilantro.
These combinations bring different flavor profiles.
The dining room has an Open-air feeling because the roof is open on all sides. Their old-fashioned front entrance of Thomas Hill’s Organics Bistro opens into their wine tasting bar. They offer local wines from organic and sustainable wineries in Paso Robles and central coast wine country. Hill has a half-glass wine program.
There is also a banquet room for parties and meetings.
Paso Robles is located midway between Los Angeles and San Francisco. Paso Robles is known as wine country with more than 200 wineries in the area.
There are two airports with direct flights from Las Vegas to Santa Maria and Santa Rosa.
