Homemade guacamole, a tasty, healthy treat

 Guacamole is one of the wonders of the Southwest.  Many people grow avocado trees in their yards.  That’s good, because unlike many other trees, avocados require two trees within bee flying distance.

Just outside of Simi Valley are a number of avocado orchards.  The abundance of the fruit keeps prices down in local stores and ensures that there are plenty around to work with.

The reason avocados are healthy lies in the type of fat in it.  It is monounsaturated fat, which is heart healthy.  There is enough fat in the fruit that many herbalists recommend it for dry skin.  Just rub the inside of the peel on the dry spot, let it stay a few minutes and rinse off.

Guacamole Ingredients

1 avocado

1/3 cup salsa

1 tsp lemon juice (optional)

This can be done in a bowl, a mortar and pestle or in a food processor.  It is faster and tends to mix better in the food processor.  If using a bowl, the best implement, at least for the avocado, is a fork.  Once the mixture is put together, it can be eaten immediately.  If a lot has been made or immediate use isn’t planned, put a little lemon juice in it so it doesn’t turn brown.
