I have wanted to try to make my own ice cream for a few years, but it always seemed too daunting. I even got an ice cream maker from my mom that she had sitting around the house and never used. I put the canister in the freezer two years ago, thinking I would definitely make my own ice cream. But it has sat in the freezer, untouched. I know it probably isn't that difficult to make, but the whole process seems very time consuming.

When I saw this recipe for ice cream on Picky Palate, I knew I could tackle it because there is no ice cream maker involved (or any eggs)! This is a simple, three ingredient recipe and you can easily adapt it to make any ice cream flavor you want! I decided to stick with her original recipe which called for Oreo cookies and peanut butter. You really can't go wrong with Oreos and peanut butter in my book.

This recipe was so easy to make, it only took me a few minutes, most of which was spent whipping the cream. The end result was fabulous. The ice cream is super creamy and smooth and has a great vanilla flavor. The texture is just like regular ice cream. Plus, I loved the added chunks of Oreo and I made sure to keep my chunks on the large side. I think I would probably skip the peanut butter next time and just let the cookies shine on their own.

Peanut Butter Swirl Cookies and Cream Ice Cream (recipe from Picky Palate)

1 cup heavy whipping cream
7 oz sweetened condensed milk
1 tsp vanilla
10 Oreo cookies, broken into chunks
3 tbls peanut butter

Poor whipping cream into a bowl and mix with a hand mixer until it forms stiff peaks.

In a separate bowl, combine the sweetened condensed milk and vanilla.

Carefully fold the whipped cream into the condensed milk mixture. Add in the crumbled cookies and peanut butter.

Poor mixture into a loaf pan and freeze.
