Homemade Chicken Noodle Soup

With cold and flu season upon us, nothing is better than to make than a batch of delicious homemade chicken noodle soup. Studies have shown that chicken noodle soup helps with cold sypmtoms beyond just being warm and cozy. When you are feeling under the weather, whip up a pot of this hot, tasty soup and feel better.

Ingredients:

2 big boneless chicken breasts
half a cup of diced onion
Garlic Clove
a quarter cup chopped cilantro
2 large carrots chopped into bite size pieces
2 stalks of celery chopped into bite size pieces
2 yukon gold potatoes diced
2 cups flat egg noodles
1 box of chicken broth
2 chicken buillion cubes

Preparation:

Boil the chicken with the onion, garlic, carrots, cilantro, celery for 20 minutes until the chicken is soft and shreds easily with a fork. Drain the veggies and chicken from the water and set aside. Shred the chicken. Put the chicken broth in a large pot and add in the shredded chicken, potatoes, cooked vegetables, noodles, and bouillion cubes. Bring the broth to a boil then reduce to a simmer and cook for 30 minutes.
