Homemade chicken kabab for busy week nights

Spring break is almost over for most schools in Phoenix and kids would be back in school either Monday or Tuesday. It means back to busy week nights with homework, soccer practice, piano lessons, karate etc. Here is a quick chicken recipe for such busy nights. You can make grilled chicken kababs at home, in a couple of minutes without even firing your grill. All you need is some store bought chicken breasts, some spices and some ingenious prepping ideas. Here is the recipe for homemade chicken kabab.

Homemade Chicken Kabab

Ingredients

  • 2 chicken breasts (skinless, boneless)
  • 1 tsp salt
  • 2 tsp tandoori chicken masala
  • 1 tbsp plain yogurt
  • 1 tbsp cilantro (green corriander) chutney (store bought is ok)
  • 2 tsp canola oil
  • 1 onion (sliced)

Marinate the chicken breast pieces in the salt, spices, yogurt, chutney and 1 tsp canola oil for 30 minutes. Slice the breast pieces into 2"strips. Preheat the oven to 350 degrees F. Grease a casserole dish with some oil and pour the chicken strips along with the marinade into it. Bake in the oven for 15 minutes. Turn the chicken pieces over and bake for an additional 5 minutes. Now move the chicken casserole dish to the oven top rack and turn on the broil option. Broil on low for 3 minutes till little brown specks appear on the chicken. Be careful not to burn the chicken. Turn off the oven, turn the chicken over and broil again for 3 more minutes. While the chicken is broiling, heat a saute pan and saute the onion in the remaining canola oil. Serve the broiled/grilled chicken kababs on a bed of sizzling onions. Garnish with cilantro and serve hot with nan bread. (Note: if you buy precooked chicken breasts from the frozen meats section, you can thaw the chicken and use the recipe to cook it using only the broil option. You can save time by skipping the baking process)
