There is nothing better on a cold winter day than a steaming bowl of home made beef stew. Stewing is a cooking method consisting of slowly cooking a tough cut of meat in a liquid. It is a great way to cook cheaper cuts of meat which may be tough.
Here is my recipe for homemade beef stew with dumplings:
1-2 lbs beef--stew meat or a small chuck roast cut up into cubes.
1/2 cup flour
1/2 cup vegetable oil
2 medium onions
1 cup baby carrots or 3 carrots chopped.
4 beef bouillon cubes
4 cups water
2 cups frozen peas and carrots
3 medium potatoes cut into 1" cubes
1 cup flour
1 teaspoon baking powder
water
Salt and pepper to taste
Heat oil in pan. Coat meat pieces in flour and add to the oil, turning to brown the meat pieces on all sides. Turn down the heat to about medium and add the onions and carrots. Cook until the onions are transparent and caramelized. Add four bouillon cubes and four cups of water. Cover and bring to a boil. Turn down heat to low and simmer for 2 hours. Stir occasionally to prevent any burning on the bottom. Turn up heat until stew is beginning to boil and add the frozen vegetables. Let stew return to a boil and add potatoes. Mix flour with baking powder. Add water and stir until it forms a stiff dough. With a spoon, drop the dough into the bubbling stew until all the dough is used up. Cover and simmer for 15 -30 minutes.
