Holiday Stuffed Acorn Squash

This quick and easy dish is a meal in itself. I serve this quite often during the fall and winter months.

What You Need:
(Makes: 4 servings)

2 medium acorn squash
1/2 pound of ground turkey
1 large egg
1/2 cup of cooked wild rice
1/2 cup of tart apple, peeled, chopped
1/2 cup of fresh or frozen cranberries, chopped
1/4 cup of celery, chopped
1/2 teaspoon of salt
1/2 teaspoon of dried parsley flakes
1/4 teaspoon of ground allspice
1/4 teaspoon of ground cardamom

What to Do:
Cut squash in half and discard the seeds; set squash aside.

STEP 2) In a skillet over medium heat, cook turkey until no longer pink; drain. Add egg, rice, apple, cranberries, celery, salt, parsley, allspice and cardamom. Spoon into squash halves; place in an ungreased 13 x 9 inch baking dish. Fill dish with hot water to a depth of 1/2 inch Cover and bake at 350 degrees for 25 minutes. Uncover; bake 20 to 25 minutes longer or until the squash is tender.
