Holiday orange gingered marmalade scones

 The holidays are hectic. Parties, shopping, and holiday meal planning can quickly become overwhelming. Remember to stop once and a while and treat yourself to something comforting yet so easy you can fit it into any busy schedule. 

Scones are a delightful way to get a bit of pastry decadence without all the hassle. This simple yet elegant recipe for Orange Gingered Marmalade Scones is quick and easy with minimal clean up. These scones are fantastic for a weekend family breakfast, a keep my sanity tea break, or an elegant, yet easy sweet to take to the office Christmas party or family get together.  Try different shapes and sizes to fit the occasion and you are only limited by your imagination. 
 
Raw fresh ginger is readily available at your local Ingles, Food City and Kroger grocery stores and gives this recipe a nice kick without being overbearingly spicy.

Orange gingered marmalade scones
 
Ingredients
  • 2 cups flour
  • ¼ cup sugar
  • 1 Tablespoon baking powder
  • ½ teaspoon salt
  • 8 Tablespoons unsalted butter (cut into pieces)
  • ½ inch grated fresh ginger
  • ½ cup orange marmalade 
  • 1 egg
  • ¼ cup orange juice 
 
Directions
Pre heat oven to 400 degrees F.
 
Sift flour, sugar, baking powder, and salt together, set aside.
 
Mix egg, marmalade, grated ginger and orange juice together.
 
Blend butter into flour mixture with pastry blender or two table knives until butter is in pieces approximately the size of a pea.
 
Slowly add wet mixture to dry mixture and gently mix just until dough comes together. You may not need all of the wet ingredients depending on your flour and humidity Do not over work this dough or it will be tough..
 
Gently pat dough into a round disk about ½ inch thick and either cut out rounds or simply cut into triangles.
Dust work surface with a bit of flour to prevent sticking.
 
Place scones on a greased cookie sheet and bake for approximately 10 minutes. Keep a close eye on scones after about 8 minutes to prevent over baking. 
 
If you prefer a slightly sweeter scone sprinkle a little sugar on each scone before baking.
 
Serve with butter and jam or a mixture of equal parts of orange marmalade and softened cream cheese for an extra special tea time treat.
