One of my family's traditions during Christmas is a delectable, delicious breakfast or brunch recipe called Sausage Stuffed French Bread. Much of the recipe can be done ahead of time. All the meat, onions and seasonings can be sauteed a day or two before and refrigerated, and then combined with the eggs and bread right before cooking. The bread can also be hollowed out ahead of time, though you would need to wrap it well and be sure to keep it airtight in order to keep it fresh. One store-bought loaf of French bread works well here, or you can use the miniature loaves and let each family member have their own little loaf! They'll cherish it and savor every bite, because this recipe is a winner.
Sausage Stuffed French Bread
1 lb. hot sausage
1/2 c. chopped onion
1 c. chopped celery
1/2 tsp. ground sage
1/8 tsp. pepper
1/4 c. milk
2 T. melted butter
1 loaf unsliced French bread
2 eggs
sliced cheddar cheese (or any other you desire)
Cook sausage, breaking it up as it cooks until all pink is gone. Add onion and celery. Cookin until tender and sausage is brown. Slice bread lengthwise and remove insides. Combine pulled bread, seasoning and cooked sausage mixture. Separately, combine eggs and milk, then toss that mixture with the stuffing and mix well. Mound onto lower half of breadshell and place the top half over that. Brush the bread with melted butter. Place on cookie sheet in 400 degree oven for 15 minutes. Take out of oven and place sliced cheese under lid. Cook another five minutes until cheese is melted.
