Holiday apple salad quick and easy party food

 Tis the night before the office party and all through the house the children are squealing and chasing, oh no, is that a mouse? The blackberry is screaming, the husband is keening and now I remember a salad for the ladies’ lunch I am needing!  I moan and scream oh what, shall  I bring! How could I have missed such an important thing.  

When what to my wondering eyes should appear, but a tiny scrap of paper with a rescue solution for my  lunching nightmare.  I remember a dear church lady who was kind enough to appease, my begging and pleading for this recipe please.
 
Her special apple salad is yummy and wonderful ,whipped cream and cream cheese enveloping pineapple.  With a bit of sour from the Granny Smith apple it will of course include lemon Jell-O. It will shake and jiggle and all nestled inside, will be the sweet sugar and celery besides. Now just a bit of pecan and the dish is complete. Oh how easy that was and now I can be sweet.

So with all good and happy Christmas cheer, I prance to the kitchen and find that all is here. This dish I whip up in a flash and for little cash,  pop in the fridge for the flavors to mash.  The evening is saved and so is the lunch, now where, oh where is that mouse, I haven’t a hunch.
 
 
A bit of  humor to counter the inevitable stress we seem to encounter every holiday season. This recipe pulls together quickly and easily and a well stocked pantry will usually have the necessary ingredients. If you do not have Granny Smith apples simply use what you have and sprinkle with a bit of lemon juice for extra tang. All ingredients can be found in your local grocery. 
 
This recipe is courtesy of  Phyllis Jones (well known as a very good cook), she graciously did not make me beg too terribly for it!  
 
 
Apple Salad
 
  • 20 oz can crushed pineapple (do not drain)
  • 2/3 cup sugar
  • 1 cup chopped celery
  • 1 cup chopped pecans (can be toasted for a bit of extra special flavor)
  • 1 3oz box of lemon Jell-O
  • 1 8oz container of cream cheese (softened)
  • 1 cup diced unpeeled Granny Smith apple
  • 8oz whipped cream or cool whip
 
 
Combine pineapple and sugar boil three minutes; remove from heat. (allow to cool a minute or two)
Add Jell-O and cream cheese and mix well
Allow to cool completely
Add apples, celery, nuts and gently fold in cool whip/whipped cream
Place in serving bowl of your choice
Chill at least 4 hours or can be made in advance and chilled overnight
