“Inspired by fine estate vineyards, we control every aspect of production from growing our own grain organically, to traditionally floor malting, pot distilling, aging and bottling all by hand on the estate” said Jeffrey Baker, Hillrock owner. “This has proven to be a recipe for success, as the unique characteristics of our farm are distinctly expressed in our award winning whiskeys and people continue to ask for more.”
Hillrock Double Cask Rye is made in small batches using organically grown estate rye. Master Distiller Dave Pickerell explains that the double cask aging process extracts additional caramel and vanilla from the oak to balance the traditional rye spices present in the whiskey. The second cask aging occurs in a No. 4 charred barrel made from American white oak seasoned for over two years before assembly. This level of char char offers extra extractable vanilla and caramelized wood sugars, while the air seasoning eliminates bitter tannins which can be present in kiln dried oak.
The Double Cask Rye will be released in limited single cask allotments to New York State's vendors and restaurants. It joins Solera Aged Bourbon, Estate Single Malt and George Washington’s Rye Whiskey, Estate Edition, in the Hillrock portfolio.
The Hillrock team, which includes Timothy Welly, distiller and operations manager, will host an anniversary open house at the distillery from noon to 5 p.m. Saturday, September 21. The event, open to the public, will give visitors the opportunity for tours, tasting and purchases.
