In a big city like Fort Worth, where can you go to get that small town feel? Hickory Stick Bar-B-Q in Everman, TX is a small town kind of place. They serve the usual brisket and ribs, but they also serve homemade desserts baked by the owner’s 80 year old mother.
Johnny Jones, father of present owner Mark Jones, started Hickory Stick Bar-B-Q in 1976. The restaurant still operates in its original location at 900 E Enon. They are open 8 AM to 8 PM, Tuesday through Saturday. Workers from nearby industries fill the restaurant at lunch each day. Locals say that if you are in Everman at lunchtime, the choices are barbecue and barbecue.
That barbecue includes the usual brisket, ribs, sausage, etc. The sides are traditional choices such as, potato salad and slaw. On my recent visit, I tried the bbq ribs and my husband, Marty, ordered the Smokey Denmark brand hot links. The hot links were mildly spicy with the texture of a hot dog. The sweet but slightly tangy barbeque sauce complemented the meat. The sides were average taste, but the ribs may have been the best I have ever eaten. The ribs were meaty and tender, with no gristle and almost no fat. Even though they were lean, they were moist with a smoky flavor. The standard barbecue was good but a few of the choices were unusual.
Desserts baked by an 80 year old are rarely seen on the menu at bbq restaurants. Mark Jones’s mother has been preparing the desserts for years. Most days she bakes peach cobbler and pecan pie. On Fridays, she prepares the whole gamut of desserts: the usuals plus banana pudding, coconut cream pie, peanut butter pie, chocolate pie, and French vanilla coconut pie. Marty and I shared a piece of the pecan pie. The pecans were crunchy, the filling was sweet and the crust was flaky, not tough or mushy. I always thought my aunts made the best pies. Forgive me, Aunt Shirley and Aunt Margie, Granny Jones makes the best pecan pie.
Hickory Stick Bar-B-Q gives you a chance to experience life in a small town where everyone knows everyone else. They have traditional Texas barbecue with some outstanding features like their ribs and pecan pie.
