This hearty pasta fagioli recipes is perfect for a cold winter nights meal! Serve with a side of crusty bread and you have a warm and complete meal.

Hearty Pasta Fagioli

  • 2 tbsp olive oil
  • 1/2 onion, diced
  • 3 tbsp minced garlic
  • 1 can diced tomatoes with basil, garlic and oregano
  • 2 cans low sodium or homemade chicken broth
  • 3 cups water
  • 1 box, 16 ounces pasta twists
  • 1/2 tsp dried parsley
  • 1/2 tsp dried, chopped basil
  • 2 cups fresh spinach, roughly cut
  • 1 can white kidney beans (15 ounce can)
  • 1 can dark red kidney beans (15 ounce can)
  • 1/2 tsp salt
  • 1/4 to 1/2 tsp pepper
  • Grated Parmesan cheese

Over medium heat, heat oil in a large pot.

Add onions and cook for 5 minutes.

Add garlic and stir.

Stir in tomatoes, broth and 3 cups of water.

Bring to a simmer over high heat.

Add pasta, parsley and basil.

Cook for 5 minutes, stirring.

Stir in spinach and cook for 5 minutes.

Reduce heat to medium and add in beans, salt and pepper.

Heat through and top with cheese when serving.
