Hearty Pasta Fagioli
- 2 tbsp olive oil
- 1/2 onion, diced
- 3 tbsp minced garlic
- 1 can diced tomatoes with basil, garlic and oregano
- 2 cans low sodium or homemade chicken broth
- 3 cups water
- 1 box, 16 ounces pasta twists
- 1/2 tsp dried parsley
- 1/2 tsp dried, chopped basil
- 2 cups fresh spinach, roughly cut
- 1 can white kidney beans (15 ounce can)
- 1 can dark red kidney beans (15 ounce can)
- 1/2 tsp salt
- 1/4 to 1/2 tsp pepper
- Grated Parmesan cheese
Over medium heat, heat oil in a large pot.
Add onions and cook for 5 minutes.
Add garlic and stir.
Stir in tomatoes, broth and 3 cups of water.
Bring to a simmer over high heat.
Add pasta, parsley and basil.
Cook for 5 minutes, stirring.
Stir in spinach and cook for 5 minutes.
Reduce heat to medium and add in beans, salt and pepper.
Heat through and top with cheese when serving.

I LOVE pasta fagioli! My recipe is a little different. Hubby likes it when I start with some nice browned pork ribs. Mmmmm....I think I need to make some today!
