Healthy zucchini snack for Italian food lovers

Italian food is the best, but it's not very kind to the "behind". All that pasta can add up in the calories department leading to a posterior advertisement for our love of Italian food that we could do without.

So how can we enjoy some Italiano sans linguini love handles or lasagna thighs?

Zucchini!

Yes, the wonderful and versatile squash that can easily replace pasta in any Italian dish (spaghetti squash is also a fabulous alternative). Zucchini can be diced, sliced, or peeled into any dish in place of pasta or bread. It pairs well with Parmesan, and adds a lot of texture and love to any red sauce.

One healthy zucchini snack buster found on Facebook (Racing and Saving Mama - original submission unknown) offers the following tasty zucchini Parmesan bites with minimal fuss and maximum flavor.

What you will need:

4 medium, fresh zucchini, sliced in half
1/2 cup fresh Parmesan cheese, grated
1-2 tablespoons fresh rosemary & thyme, minced
smidge of olive oil
salt & pepper to taste

Directions

Pre-heat oven to 350F. Lightly brush both sizes of the zucchini with olive oil and place on a foil-lined baking sheet. Mix cheese and herbs together in a small bowl and sprinkle over the zucchini along with salt and pepper to taste. Bake for 15 minutes and place under the broiler for the last 3-5 minutes until cheese is crispy and browned.

Two of the half slices of zucchini with the Parmesan cheese, brush of oil, herbs, and salt and pepper come in under 100 calories. Enjoy!
