Healthy vegan oatmeal cookies

With this amazingly cold weather keeping us indoors here in the Midwest, it’s more difficult to be mindful of your health regimen. It is difficult to break holiday eating habits, especially when you are unable to get out and enjoy nature.

With the cold days and nights it’s easy to turn to comfort foods and warm, baked goodies. What better opportunity to take the time to revamp your recipes for the better.

This recipe for oatmeal cookies takes a beloved classic and makes it healthy (if eaten in moderation) and still full of flavor. They even make a great snack for the kids as a great alternative to traditional cookies or commercial snack bars.

One thing I especially love about these cookies is they do not require any special egg substitute. You can use everyday ingredients that you already have at home.

I find it best to flatten these out a bit before cooking because they do not change shape. They come out of the oven looking the same way they did going into the oven.

Healthy vegan oatmeal cookies


½ cup vegan margarine, softened, such as Earth Balance

1 ½ cups applesauce

½ cup molasses, maple syrup, or agave nectar

2 large ripe bananas

1 ¾ cups whole-wheat pastry flour

1-teaspoon baking soda

1-teaspoon baking powder

1-teaspoon cinnamon

3 cups rolled oats

1-cup raisins or dried cranberries

½ cup walnuts (optional)*


Preheat oven to 400 degrees. Peel and mash bananas in a large bowl until large lumps are gone.  Add margarine, applesauce, and molasses, maple syrup, or agave nectar and mix until creamy. Add flour, baking soda, baking powder, and cinnamon and mix well. Stir in oats and raisins or dried cranberries. Drop (dough will literally just slide off the spoon) spoonfuls of dough onto oiled cookie sheet and flatten out slightly. Bake 8-10 minutes.
