Sometimes I wonder how people buy into certain holidays. For instance, February 14th is a day where a naked (or nearly naked) baby shoots people in the chest with an arrow. Rather than the arrow killing that person, he falls in love with the next person he sees. Just think about that next time Zales tries to talk you into buying jewelry.
On a serious note, not too many things say “I love you” like cooking your significant other food. This can range from the classic breakfast in bed, to a relaxing picnic lunch or even a romantic dinner for two.
Today I’m focusing on breakfast. One of my favorite breakfasts to make is waffles. It’s simple, tasty and can be made healthy with a simple addition or fruit or a protein boost with this recipe. (Note: if you don’t have a waffle iron, simply add an additional ¼ to ½ cup milk and you’ve got pancake batter.)
Ingredients:
- ½ cup flour (Whole wheat or Buckwheat works great)
- 1 cup cream-style cottage cheese
- 4 eggs (about 1 cup of Egg Beaters if you prefer)
- ¼ tsp. Kosher salt
- ¼ cup Canola oil
- ½ cup 1% milk
- ½ tsp. Vanilla extract
- Sliced bananas or blueberries (optional)
Directions:
- Mix all ingredients into large mixing bowl.
- Whisk/ blend for 1 minute until batter is even.
- Measure ¼ to ½ cup per waffle or pancake.
- Cook until you get your desired color.
While butter and syrup are traditional toppings, I suggest apple butter. It's like applesauce: healthy and delicious)
