Healthy Valentine's Day recipes: Artichoke Hearts

In continuing with the heart theme for Valentine’s Day, while yesterday dealt with heart-shaped waffles, today will focus on artichoke hearts.

Most people only know of artichokes as part of the spinach and artichoke dip. Due to the ingredients (read: lots and lots of cheese) the spinach and artichoke only play a small part in that dish.

This is a much healthier dish that still allows you to enjoy the three main ingredients of any artichoke dip: spinach, artichokes and cheese.

Ingredients:

  • Artichoke hearts (I recommend 1-2 jars of marinated artichoke hearts)
  • 2/3 cup cooked chopped spinach
  • 1 tsp. lemon pepper
  • 1 clove minced garlic
  • ¼ tsp. Kosher salt
  • 18 thin slices brie or gorganzola cheese
  • freshly ground pepper (to taste)

Directions:

  1. Preheat broiler.
  2. Combine spinach, lemon pepper, garlic and salt in a small bowl. Top each artichoke heart with the spinach mixture and cheese. Broil until cheese melts, 1 to 2 minutes.
