Healthy travel food: black quinoa-black bean salad is perfect to pack and nutritious to eat

Traveling can wipe all the energy out of most of us. Then, there is the challenge to try and find dining establishments along your journeys that are healthy and nutritious. That alone takes energy that most of us don’t particularly have after traveling all day. One healthy way to persist through the journey might be toting along a salad made from home. An easy, healthy salad that packs well will provide nourishment, boost energy and satisfy hunger throughout the day. Black quinoa-black bean salad packs lots of nutrients, boasts flavor and is quite satisfying. High in protein, it also is high in calcium, iron and fiber—the perfect travel salad!

Here’s how:

Start with the ingredients:
½ cup black quinoa
½ cup organic black beans, low sodium
1 shallot, diced
½ organic red pepper, chopped
½ cup organic corn
½ cup organic grape yellow tomatoes, sliced
½ cup zucchini, chopped
½ cup toasted pine nuts
½ cup low fat feta, crumbled
Sea Salt, a dash
¼ tsp. black pepper
1/8 tsp. cumin
¼ tsp. chili pepper
1/8 tsp. chipotle powder
1 juice of lime and a handful chopped cilantro
3 Tbsp. extra virgin olive oil

Prepare black quinoa. Soak before using to remove the bitter coating of quinoa. Follow directions on quinoa package (Usually prepared with ½ cup quinoa and 1 cup water.) Boil. Cover and simmer 20 minutes. Cool.

In medium bowl, mix beans, vegetables, oil, lime, nuts and spices omitting the feta until later.

Fold black quinoa into bowl with other ingredients. Add feta.
Chill for one hour. Serve. 6 servings.

For travel, pack into small container and keep chilled with freezer bag. Don’t forget a fork or spoon.
