Healthy recipes: Traditional, cajun, and french style guacamole

Ahhh, guacamole – the ultimate dip!  Of course you could stick with the standard Mexican-style recipe that goes something like this:

Traditional Guacamole

Ingredients:

3-4 large ripe avocadoes

2 Tablespoons fresh lemon juice

About ¾ cup store-bought hot, medium, or mild pico de gallo to taste (found in the produce department)

Salt to taste

  1. Mash ripe avocadoes with a fork.
  2. Mix in lemon juice.
  3. Add in pico de gallo and salt to taste.
  4. Garnish with additional pico de gallo.
  5. Serve with corn chips, tortilla chips, or celery and carrot sticks

Or, you could jazz it up Cajun-style:

Cajun Guacamole

Ingredients:

3-4 large ripe avocadoes

Finely diced red and yellow bell pepper

2 Tablespoons fresh lemon juice

2 cloves of garlic, very finely chopped

About 1 cup cherry tomatoes cut into halves or quartered depending on their size

About ½ cup red onion, diced

Cayenne pepper to taste

Bryan Marcel's Signature Cajun Seasoning to taste Recipe

Course ground black pepper

  1. Mash avocadoes, lemon juice, and garlic together.
  2. Add tomatoes, onions, and some of the diced peppers.
  3. Mix in Cajun seasoning, cayenne and black pepper.
  4. Garnish with remaining peppers.
  5. Serve with sweet potato chips or celery and carrot sticks.

Or for something really different, try this French twist to your guacamole dip:

French Guacamole

Ingredients:

3-4 large, ripe avocadoes

2 Tablespoons of fresh lemon juice

4 Tablespoons finely chopped shallot

2 Sundried tomatoes, finely chopped

2 Teaspoons Dijon mustard

2 Tablespoons fresh tarragon or 1 tablespoon of dried tarragon

Garlic salt to taste

  1. Mash avocadoes with lemon juice, garlic salt, and Dijon mustard.
  2. Fold in tomatoes, shallot and tarragon.
  3. Garnish with additional tarragon.
  4. Serve on French bread cut into ½ rounds or celery and carrot sticks.
